Tuna With Tapenade & Beans

Tuna is probably the best fish on a barbecue. It is dense and meaty, holding together really well. A salty, garlicky tapenade is a perfect accompaniment. You can buy tapenade ready made, but you'll find the home made version is five minutes work and the flavours are so much more vibrant.

Ingredients

    Tuna Steaks
    2cm thick
  • 2
    clove(s)
    Garlic
    freshly minced
  • 4
    whole
    Anchovies
    drained
  • 6
    leaves
    Fresh Basil

    Extra Virgin Olive Oil
  • 3

    Green Beans

Directions

  • 1 Have tuna steaks at room temperature.
  • 2 In a food processor combine garlic, anchovies, basil and olives with enough olive oil to make a thick, smooth paste.
  • 3 Heat the flat or char grill on your BBQ to a really high heat, add a little oil to the tuna and sear for a minute on either side, leaving the centre very rare. Remove and stand.
  • 4 Place tuna on a plate beside steamed or boiled beans. Top the tuna with a spoonful of tapenade and drizzle with olive oil.
