Steak With Herb Butter

Some herb butter is a very handy thing to have in the fridge or freezer. It jazzes up a plain piece of steak, or fish or bland chicken, whether you barbecue, grill or pan fry them.

    Rump Steak
    thick
  • 250
    g
    Butter
    softened
  • 2
    tbsp
    Fresh Parsley
    finely chopped
  • 2
    tbsp
    Fresh Basil
    finely chopped
  • 2
    tbsp
    Fresh Chives
    finely chopped
  • 2
    tbsp
    Fresh Coriander
    finely chopped
  • 1
    tbsp
    Tomato Paste
  • 4
    drop(s)
    Fish Sauce
  • 0
    tbsp
    Sea Salt
    to taste
  • 0
    tbsp
    Freshly Ground Pepper
    to taste

Directions

  • 1 Place all the ingredients other than the steak in a food processor and mix well, or simply use a bowl and mix with the back of a fork.
  • 2 Place on a sheet of plastic wrap and roll into a sausage shape about the diameter of a twenty cent piece, twisting the ends to seal.
  • 3 Chill in the fridge until firm.
  • 4 Heat the barbecue to medium hot and oil lightly.
  • 5 Cook the steak to your liking.
  • 6 Cover loosely with foil and rest somewhere warm for a couple of minutes.
  • 7 Place the steak on a warm plate and top with a slice of the herb butter.
  • 8 (Leftover butter can be stored in the fridge or freezer)
