Quick BBQ Oregano Prawns

Here’s the flavours of Greece captured in five minutes on an Aussie barbie. You’ll need a sharp knife to halve the prawns.

Goes Well With

Ingredients

  • 2 dozen
    large
    Green King Prawns
    halved lengthways and cleaned, or just peeled if you like
  • 1
    heaped tbsp
    Dried Oregano Leaves
    crumbled 3 tablespoons extra virgin olive oil
  • Zest of Half a Lemon
    very finely grated
  • 1/2
    tsp
    Sea Salt
  • 1/2
    tsp
    Black Pepper
    freshly ground
  • 1
    whole
    Lemon
    to server

Directions

  • 1 Combine all ingredients except whole lemon and refrigerate, covered for one hour.
  • 2 Place flesh side down first on the very hot char grill on your barbecue and cook for a minute or two on each side until just done.
  • 3 Serve with lemon quarters.
