Prosciutto Wrapped Seafood Kebabs

Ingredients

    whole
    Lemon
    quartered
  • 8
    whole
    Green King Prawns
    peeled with last section of tail left on
  • 8
    whole
    Scallops
    large white scallops, small hard ligament removed
  • 8
    piece(s)
    Blue Eye
    each piece 3cm square and 1 cm thick
  • 6
    slice(s)
    Prosciutto
    each piece cut into 2.5 x 8cm pieces
  • 16
    whole
    Tomatoes
    cherry or grape tomatos
  • 1
    tbsp
    Extra Virgin Olive Oil
    for brushing

Directions

  • 1 Wrap each piece of seafood in a strip of prosciutto and place on a soaked wooden skewer with the order something like: blue eye/tomato/scallop/tomato/prawn.
  • 2 Brush lightly with oil and cook on a medium grill until the seafood is just firm to the touch.
