    Chicken Thighs
    skin off, sliced

    Chorizo Sausages
    sliced
  • 8

    Green Prawns
    medium, peeled
  • 12

    Black Mussels
  • 12

    Calamari Rings
    fresh
  • 2
    tbsp
    Fresh Parsley
    chopped
  • 2
    tbsp
    Fresh Coriander
    chopped
  • 2
    clove(s)
    Garlic
    peeled and finely chopped
  • 1

    small, peeled and finely sliced

    Smoked Paprika

    Saffron Threads
    dissolved in a little hot water

    Chicken Stock
    tetra pack, plus water or 3-400 ml fresh
  • 3

    Olive Oil

Directions

  • 1 Heat the pan and add the oil, then the chorizo, chicken, onion and garlic. Cook over a high heat to lightly colour the chicken and the onion.
  • 2 the rice, paprika, peas and saffron mixture and stir to coat, then add half the stock.
  • 3 Add some sea salt, not too much if using packaged stock. Cheat by placing a lid loosely on the pan to help cook the rice over a low\medium heat.
  • 4 Remove the loose fitting lid after a couple of minutes and add more stock if necessary.

  • 6 Scatter parsley and coriander over the top and serve with a salad.
