Oysters With Gazpacho Dressing

Of course there is nothing wrong with oysters with lemon and a grate of black pepper as long as you have great, fresh oysters. You still need great, fresh oysters here, but the gazpacho dressing is both different and a really good sharp match the creamy, salty character of the oysters.

    tbsp
    Sherry Vinegar
  • 1
    tbsp
    Sherry Vinegar
  • 1
    drop(s)
    Tabasco Sauce
    a few drops to taste.
  • 1
    dash
    Black Pepper
    add to taste.
  • 1
    tsp
    Red Onion
    very finely diced
  • 1
    tsp
    Red Capsicum
    very finely diced
  • 1
    tsp
    Cucumber
    very finely diced (no skin, no seeds)
  • 1
    tsp
    Tomato
    very finely diced (no skin, no seeds)
  • 1
    tbsp
    Olive Oil
  • 1
    tbsp
    Sherry Vinegar
  • 0
    tbsp
    Tabasco Sauce
    to taste
  • 0
    tbsp
    Freshly Ground Pepper
    to taste

Directions

  • 1 Place all ingredients in a screw top container and shake, then chill for 30 minutes.
  • 2 Spoon a little of the dressing on to each oyster and serve.
