Cuban Palomilla Steaks With Onions

Ingredients
- 8thinSirloin Steaks2/3 cm - can use top round steak
- 4clove(s)Garlic
- 1cup(s)Lime Juice
- 5tbspOlive Oilpreferably spanish
- 1tspGround Cumin
- 1tspSea Salt
- 1tspBlack Pepperfreshly ground
- 2mediumBrown Onionto large, sliced
- 1cup(s)Fresh Flat-leaf Parsleychopped
Directions
- 1 Puree the garlic, lime juice, cumin, salt and pepper and three tablespoons of olive oil in a food processor or grind in a mortar and pestle.
- 2 Marinate the steaks in 2/3 of the garlic and lime mixture covered in the fridge for one hour. Using the remaining two tablespoons of oil, cook the onions over medium heat on the flat grill with the remaining third of the marinade until golden brown.
- 3 While the onions are cooking, wipe excess marinade from steaks and cook over high heat on the char grill.
- 4 Fold the parsley through the onions and serve a big spoonful of onions with a couple of the thin steaks arranged on top.
