Clams With Prosciutto, Chilli, Mint And Sherry

- 1wholeRed Capsicumfinely diced

Directions
- 1 In the baking tray of your barbecue, over a high heat, cook the garlic, chilli, capsicum, shallot and prosciutto in the olive oil for a minute or two without browning the vegetables.
- 2 Add the clams and sherry, then immediately place the lid on the baking dish (or close the lid of the barbie). Check after a few minutes to see if all the shells are opened, if not, give them a minute more.
- 3 Finish with black pepper and mint, stirring the mint through.
- 4 Pile the shells into four bowls, spooning over all the juices.
- 5 Serve with thinly sliced baguette.
