Clams With Prosciutto, Chilli, Mint And Sherry

    Clams
    boston bay or other
  • 1
    clove(s)
    Garlic
    large, finely diced
  • 1
    whole
    Red Capsicum
    finely diced
  • 1
    whole
    Red Chilli
    large, finely diced
  • 2
    whole
    Red Shallots
    peeled and finely diced
  • 4
    slice(s)
    Prosciutto
    thin, finely diced
  • 2
    tbsp
    Olive Oil
  • 0
    cup(s)
    Dry Sherry
    approx.
  • 0
    tsp
    Black Pepper
    freshly ground, to taste
  • 16
    leaves
    Fresh Mint
    approx., finely shredded

Directions

  • 1 In the baking tray of your barbecue, over a high heat, cook the garlic, chilli, capsicum, shallot and prosciutto in the olive oil for a minute or two without browning the vegetables.
  • 2 Add the clams and sherry, then immediately place the lid on the baking dish (or close the lid of the barbie). Check after a few minutes to see if all the shells are opened, if not, give them a minute more.
  • 3 Finish with black pepper and mint, stirring the mint through.
  • 4 Pile the shells into four bowls, spooning over all the juices.
  • 5 Serve with thinly sliced baguette.
