Chinese Pork Ribs

    American Style Pork Ribs
    sawn in half if not already done, excess fat removed, cut into four rib sections.

    Garlic
  • 1
    litre(s)
    Water
  • 1
    thumb(s)
    Ginger
  • 1
    piece(s)
    Orange Peel
    white pith removed; or a piece of dried orange or tangerine peel.

    Mirin
    shaosing rice wine may also be used.

    Soy Sauce

    Barbecue Sauce
    optional for sauce.

    Sweet Plum Marinade
    optional for sauce.

    Orange Peel
    grated. optional for sauce.

Directions

  • 1 Place all the ingredients in a large pot and bring to the boil then simmer very gently for half an hour.
  • 2 Remove the ribs and allow to rest for twenty minutes while you increase the heat under the stock to reduce it.
  • 3 To make the sauce, simply place the plum and barbecue sauces in a small saucepan with the orange peel and bring to the boil. Simmer for one minute.
  • 4 Brush the ribs with a little neutral oil and cook on the char grill, basting with the reduced stock. Cook until just slightly charred and crispy.
  • 5 Pour sauce over as you serve the ribs.
