Caramelised Mangoes With Coconut Ice Cream

- 4tbspCaster Sugar
- 1cup(s)Coconut Cream
- 1cup(s)Palm Sugar
Directions
- 1 Melt the palm sugar in the coconut cream in a small saucepan over low heat. Refrigerate until cold.
- 2 Sprinkle the sugar over the cut halves of mango.
- 3 Place sugar/flesh side down on a very clean, very hot flat bbq grill or under the griller of your stove. Cook only to caramelise the sugar- the fruit only needs to warm through.
- 4 Serve two mango cheeks with a drizzle of the sweet, rich cream.
