- 1kgChickenbreast and/or thigh cut into 2cm cubes
- 1tbspCelery Salt
- 1tbspGround Paprika
- 1tbspDried Thyme Leaves
- 1tbspGround Oregano
- 1tbspDried Cumin
- 1tspGround Cayennemore to taste
- 1tbspNeutral Oil
- 1wholeGreen Capsicumcut into 1cm square pieces
- 2stalk(s)Celerychopped
- 1wholeRed Onionsmall onion, peeled and finely sliced
- 1wholeGreen Chillivery finely sliced
- 2tbspCorianderchopped
- 2tbspExtra Virgin Olive Oil
- 2tbspLemon Juice
- 3drop(s)Tabasco Sauce
- 1pinch(es)Black Pepper
- 1pinch(es)Sea Salt
Directions
- 1 Mix the chicken with all other ingredients and marinate for 2 - 12 hours.
- 2 Thread chicken onto skewers and cook on a hot char or flat grill until opaque.
- 3 Mix the olive oil, lime juice, Tabasco and salt and pepper in a salad bowl. Add capsicum, celery, onion and chilli and mix well to coat.
- 4 Serve 2 skewers each with a generous spoonful of salad.
