    Extra Virgin Olive Oil
  • 1
    tsp
    Lemon Peel
    finely grated
  • 1
    tbsp
    Capers
    rinsed and chopped
  • 1
    tsp
    Lemon Juice
  • 1
    tbsp
    Rosemary
    finely chopped
  • 1
    pinch(es)
    Black Pepper
  • 1
    pinch(es)
    Sea Salt
  • 4
    fillet(s)
    Blue Eye
    or other firm white fish fillets
  • 1
    tbsp
    Fresh Rosemary
    very finely chopped
  • 2
    clove(s)
    Garlic
    peeled and crushed
  • 2
    tbsp
    Extra Virgin Olive Oil
  • 2
    tbsp
    White Wine
  • 1
    pinch(es)
    Black Pepper
  • 1
    pinch(es)
    Sea Salt

Directions

  • 1 Mix oil, garlic, wine and rosemary, seasoning with salt and pepper. Pour over fish and marinate for only one hour.
  • 2 Make the dressing by combining all ingredients and mixing thoroughly.
  • 3 Drain the marinade from the fish and grill over high heat.
  • 4 Serve with dressing spooned over fillets, with a green salad.
