Blue Eye Fillets with Lemon and Rosemary

- 6tbspExtra Virgin Olive Oil
- 1tspLemon Peelfinely grated
- 1tbspCapersrinsed and chopped
- 1tspLemon Juice
- 1tbspRosemaryfinely chopped
- 1pinch(es)Black Pepper
- 1pinch(es)Sea Salt
- 4fillet(s)Blue Eyeor other firm white fish fillets
- 1tbspFresh Rosemaryvery finely chopped
- 2clove(s)Garlicpeeled and crushed

Directions
- 1 Mix oil, garlic, wine and rosemary, seasoning with salt and pepper. Pour over fish and marinate for only one hour.
- 2 Make the dressing by combining all ingredients and mixing thoroughly.
- 3 Drain the marinade from the fish and grill over high heat.
- 4 Serve with dressing spooned over fillets, with a green salad.
