    T-bone Steak

    Fresh Thyme

    Salt

    Black Pepper
  • 4
    whole
    Zucchini
    thinly sliced lengthways
  • 3
    whole
    Red Chilli
    long chillies cut into fine rings
  • 3
    clove(s)
    Garlic
    crushed
  • 100
    ml
    Red Wine Vinegar
    cabernet sauvignon vinegar is best
  • 300
    ml
    Extra Virgin Olive Oil
  • 1
    tsp
    Fresh Oregano
    picked & roughly chopped
  • 1
    tsp
    Fresh Thyme
    picked & roughly chopped
  • 2
    tsp
    Fresh Parsley
    picked & roughly chopped
  • 1
    whole
    Lemon(s)
    zest & juice
  • 40

    Black Ligurian Olvies
    pitted & halved

Directions

  • 1 Season and rub the steaks with olive oil and thyme leave stand to room temperature.
  • 2 Pre-heat char grill.
  • 3 Cook steaks for 2 minutes each side or until cooked to your liking. Remove to a plate, cover loosely with foil and rest 5 minutes
  • 4 Combine all ingredients except zucchini and let stand. Grill the zucchini on the char grill until just tender then add to marinade.
  • 5 Serve steaks with marinated zucchinis.
