    8 x 100 thin lamb leg steaks

    Dried Oregano
  • 1
    tsp
    Ground Cinnamon
  • 1
    tsp
    Sea Salt
  • 2
    leaves
    Bay Leaves
  • 3
    clove(s)
    Garlic
    peeled and crushed
  • 4
    tbsp
    Extra Virgin Olive Oil
  • 4
    tbsp
    White Wine
  • 4
    slice(s)
    Eggplant(s)
    1.5cm thick slices
  • 4

    Tomato
    1.5cm thick slices

    Plain Flour

    Milk

    Parmesan

    very finely chopped

Directions

  • 1 Mix oregano, cinnamon, salt, bay leaves, garlic, oil and wine in a shallow dish and marinate the lamb steaks for 2-4 hours.
  • 2 Grill the lamb over high heat while grilling the tomatoes and eggplant brushed with oil and seasoned with salt and pepper over medium heat.
  • 3 Place a lamb steak on each of four plates, then add a slice of eggplant. Then another lamb steak and finally the tomato.
