- 800gLamb8 x 100 thin lamb leg steaks
- 2tspDried Oregano
- 1tspGround Cinnamon
- 1tspSea Salt
- 2leavesBay Leaves
- 3clove(s)Garlicpeeled and crushed
- 4tbspExtra Virgin Olive Oil
- 4tbspWhite Wine
- 4slice(s)Eggplant(s)1.5cm thick slices

- 150gPlain Flour
- 700mlMilk

Directions
- 1 Mix oregano, cinnamon, salt, bay leaves, garlic, oil and wine in a shallow dish and marinate the lamb steaks for 2-4 hours.
- 2 Grill the lamb over high heat while grilling the tomatoes and eggplant brushed with oil and seasoned with salt and pepper over medium heat.
- 3 Place a lamb steak on each of four plates, then add a slice of eggplant. Then another lamb steak and finally the tomato.
